I dream of this place.... Seriously, I dream of this place. I don't know if this is part of the DC Pho 75 chain, but the pho here is far superior to any I have had at any other location (I am thinking not, as it takes cards and has quite a few more items on the menu).
At any rate, on to the pho:
It is hot. Very hot. So hot that it actually softens your noodles and cooks your meat. This is hot. The way God intended.
It is fast. Crazy fast. You are in the process of being seated when the exact pho you want somehow or other beats you to the table. (Obviously, this is a slight exaggeration, but you get the idea.)
There is plenty of meat. Thin strips. Big chunks. Everything is as it should be. Perfect.
The herbs are fresh. Is that too much to ask at other pho joints? The turnover is always good in these places. Take the time to get herbs fresh daily. It makes a difference.
The broth is seriously to die for (or at least to dream of). It is perfectly viscous. Not too heavy. Not too light. Supremely flavorful. If it came in cans, I'd buy it by the case.
Of the many, many bowls of pho I have had at the many, many resteraunts I have visited, this is by far the finest. I wake up everyday and give thanks that my friend, Vieng, brought me here. I then immediately curse my bad fortune for not living close enough to go daily. So go. Quickly. Get some of this pho. You will thank me.
