Small cozy restaurant nestled in strip mall. Spartan but clean interiors, no background music and the TV was off during my visit. Menu selection for pho run a wide gamut of possible combinations of the 7 pho building blocks.
You can individually add extra portions at $1 per "topping". Large bowl is $1 more than small bowl.
I opted for the large bowl of my fav of rare beef, tendons, and meatballs. Menu price $7.50.
The broth is reminiscent of the Northern style with the rich brown cloudiness yet show no trace of the golden beef fat droplets. Flavor is spot on with traces of caramelized onions and good hint of anise in the broth. The meat is average portions of tender paper thin wafers of rare beef, tender tendons, and halved medium sized meatballs. The noodles are fresh made varietal cooked al dente with excellent chewiness, zero cloying factor. The veggie dish can use some improvements though. Absent was coriander and parsley (actually 1 sprig of parsley was buried under the bean sprout...) At least the main players, vn basil, lime, and jalapenos were present to save the day. These veggies are in season (I looked in the grocery store next door..) and should be there in full force.
Service was commendable with under 5 minutes from order to chow down time.
Definitely recommended if you are out and about between LA and San Francisco and have a hankering for pho.

This is the best in Bakersfield for traditional pho. It's sort of a hole in the wall but its very clean and yes, spartan.
