I am in Vietnam now and have caught the PHO big time. I always eat at Tony's place Saigon Cafe for the best spring rolls and lemon grass beef and now I am coming home in search of PHO. Get ready Tony I am coming to you.

Pho is very simple. Broth, beef slices, veggies. No cartilage or tripe or anything fancy just simple, good pho in a small, intimate setting. If your in the area, highly recommended, not because its the only pho place in a hour drive range, but because its just plain good.

My pho experience at the Saigon Cafe was absolutely horrible. The broth tasted and looked like dirty dishpan water. The noodles weren't cooked all the way and were unnervingly crunchy. The meat wasn't cooked all the way either, with broth not hot enough to finish cooking it. Also expensive for the quantity you receive.
The owner and his wife, however, were very nice. I enjoyed my interaction with them. Too bad niceness and the ability to make pho have nothing to do with each other.

My experience was horrible!! THe broth tasted like dirty toilet water. After ordering the owner came to me to ask about where I have eaten pho before after telling him I am a experienced Pho afficionado he advised agaisnt eating his pho! He stated he didnt have any of the true ingredients. The pho and even the crsipy rolls were absolutly horrible. The restauruant was filthy, I have traveled and eating at some pretty rustic and exoctic places around the world, this restauraunt was filthier then any place I have been too. The condiments were old and dried with layers of crust on the the top of the hoisen sauce. DONT EAT HERE!!
